A highly concentrated Cabernet Sauvignon, deeply colored and well balanced. This wine truly reflects the unique soils and climate of our mountainside vineyards. The vintage was picked over two weeks in the middle of October. The relatively moderate growing season allowed the grapes to ripen without a serious loss of acid.
The wine was spontaneously fermented in small batches of less than one ton each, and pressed off into 80% new French oak (Demptos and Remond, COF medium toast) and 20% one-year French oak. The wine was aged for 26 months with minimal intrusion and movement.

"Primary, gorgeously rich, jammy blackberry and blueberry fruit along with hints of minerals and oak emerge from this straightforward, medium to full-bodied Cabernet Sauvignon. With loads of fruit in addition to well-integrated acidity and tannin, it should reveal more complexity over the next 2-3 years, and last for 12-15. If more definition and complexity do in fact arrive, look for this 2000 to merit an outstanding score."
